Ponzu is a sauce based on mirin (sweet sake), Japanese spices (bonito flakes, konbu and shiitake), flavored with typical Japanese citrus fruits Yuzu and Sudachi. Then this is mixed with the artisanal dark soy sauce. This ponzu sauce is a fresh sour dipping sauce that is often used in Japan with Shabu-shabu (Japanese fondue) or yakiniku (Japanese barbecue). It is also sublime with fish dishes (extinguishing cod tenderloin) or in dressings as a substitute for soy sauce with citrus notes (delicious with tomatoes with black sesame seeds).

This soy sauce is traditionally produced by a family business that is already in its7th generation. For the small bottles of 150ml we have chosen a shape reminiscent of the traditional “Conprador” bottle, a white porcelain sake bottle from the 18th Century Edo period.
