With Karigane or stalks tea mixed with Gyokuro, the stems of the tea plant will be harvested. The L-theanine of the leaves mainly resides in shady parts of the tea plant, so certainly also in the stems. This stalk tea made from Gyokuro and therefore actually tastes even more umami and sweet than regular gyokuro and contains even less caffeine.
Gyokuro tea already tastes great Umami due to the cultivation in a shady plantation that is covered for 20 days L-theanine is not converted into the bitter chemical component Catechin. The name “Karigane” comes from the shape of the stem of the tea that looks like a wild goose (雁 Kari) sitting on tree branches above the water. It’s a beautiful, poetic name.
This sublime, Japanese green tea comes from Kagoshima in the Japanese province of Kyushu and is known for organic cultivation. This tea is grown by Mr. Sakamoto, an organic tea farmer and master of the covering principle of this sublime tea (see below). It is also known for the complete biological process of treating and processing both the tea plant and the soil. The latter is very rare in Japan, where pesticides are still the common ones to offer a stable taste, with the health consequences that this entails. Mr.. Sakamoto has been doing organic agriculture for more than 30 years and therefore has tea of very high quality that is also really super healthy.

Some Tips
