This green tea comes from Zhejiang Province in China. Longjing tea is a classic like Bordeaux among the French and is also called the national tea of China, especially drunk by the elite. Longjing means dragon spring, which in Asia symbolizes as the source for all the good in the world. This green tea is picked during high season: the first two weeks of spring. The leaves should be picked from the side and then stored directly in the basket, which protects the leaves from sunlight and heat. Leaves that remain in the hand for too long quickly suffer from the warmth of the hand and wither.
